I will never forget the culinary experiences from my first trip to Mexico when I was a young girl of 19. While visiting a small town called Lagos de Moreno in the state of Jalisco. I spent a day tasting local dishes and one of my favorites was Mexican street corn that I purchased from a local vendor. Served on a stick, it was piping hot and drenched in a sweet chili-lime butter and dusted with cotija cheese. It was so delicious that I ordered another and kept revisiting the local vendor several times during my visit. He gave me his recipe and as soon as I returned back to California, I made some at a friend’s BBQ and everyone loved it. Perfect for tailgating or a backyard BBQ, Mexican Street corn is definitely a crowd pleaser. You can alter the recipe to your liking or create your own spin on this easy dish.

Elotes Mexicanos (Mexican Street Corn)

Ingredients

  • 4 ears of corn (in the husk)
  • 1/4 cup Mexican Crema (you can also use mayonnaise)
  • 1/4 cup unsalted butter, melted
  • 3/4 cup grated cotija cheese (you can also use feta)
  • 1 tablespoon chile powder
  • lime wedges

Instructions

  1. Preheat your outdoor grill or indoor grill pan.
  2. In a bowl, mix together Mexican Crema and butter, set aside.
  3. Shuck and wash ears of corn. Grill each ear of corn until they are slightly charred. Roll each ear of corn in the mixture of butter of crema and then sprinkle with cotija cheese and chili powder. Serve with lime wedges.

Another side I enjoy with Mexican street corn is a traditional Mexican fruit salad. Made with freshly cut fruit and chili powder, this is perfect for a warm summer day.

Mexican Fruit Salad

Ingredients

  • 1 watermelon
  • 1 honeydew
  • 1 cantaloupe
  • 1 mango
  • 1 pineapple
  • chili powder
  • kosher salt

Instructions

  1. Slice up the fruits into small pieces and place in a bowl. Sprinkle with chili powder and salt. Toss and enjoy!
